Mitsui Ocean Fuji (2009-built as Seabourn Odyssey, last refurbished in 2022 by Seabourn, scheduled refurbishment in 2024 by MOL) is the first of the three oldest Seabourn ships - followed by the sisterships Seabourn Quest and Seabourn Sojourn. Odyssey became Seabourn fleet's oldest after Windstar purchased the boats Seabourn Legend/now Star Legend, Seabourn Pride/now Star Pride and Seabourn Spirit/now Star Breeze. The ship designers are Petr Yran and Bjorn Storbraaten (the Norwegian Y&S architectural firm). Seabourn's vessels have the biggest of all the luxury cruise ship Spa complexes at sea.

In March 2023, Carnival Corporation (as shipowner and parent company of Seabourn) sold the 14-year-old Seabourn Odyssey to the Japanese shipping company MOL (Mitsui OSK Lines Ltd). Along with the sale, Seabourn signed a time-charter arrangement with MOL that allowed the company to operate Odyssey's voyages scheduled through October 11, 2024.

Mitsui Ocean Fuji/Seabourn Odyssey cruise ship deck plan shows a total of 225 staterooms (all suites) for 450 passengers (max capacity is 540) served by 330 crew/staff.
