HAL-Holland America Line is introducing a refreshed dining experience at Rudi’s Sel de Mer aboard ms Rotterdam, ms Nieuw Statendam, and ms Koningsdam, incorporating a relaxed Mediterranean bistro ambiance. The updated concept, which debuts in January and February 2025, will offer a selection of casual yet refined Mediterranean dishes inspired by the coastal cuisines of Italy, France, Spain, and Greece.
The cruise line’s culinary team, under the guidance of Chef Rudi Sodamin, has developed a new menu that emphasizes light, vibrant flavors, featuring traditional Mediterranean ingredients such as olive oil, lemon, fresh vegetables, and herbs. The restaurant’s ambiance will be further enhanced with updated table settings designed to complement the coastal dining experience.
Holland America Line’s Vice President of Food, Beverage, and Rooms Divisions, Michael Stendebach, highlighted that the new Mediterranean bistro concept allows the cruise line to expand the menu at Rudi’s Sel de Mer, offering guests a broader selection of dishes that showcase the signature flavors and fresh ingredients of the region. The refreshed menu will include a mix of new selections as well as popular items that have remained guest favorites since the restaurant’s inception.
Dining at Rudi’s Sel de Mer will be available for a US$55 per-person supplemental charge and will also be included as a dining option for guests who purchase the Have It All premium cruise package.
