Virgin Voyages has announced the launch of 'Rojo by Razzle Dazzle,' a Spanish-inspired dining venue set to debut on Brilliant Lady, the latest addition to its fleet. This new culinary concept follows the introduction of 'Lucky Lotus by Razzle Dazzle,' a Chinese-inspired restaurant that premiered aboard Scarlet Lady in November 2024.
Chefs Justin Severino and Nate Hobart, co-owners of the acclaimed Pittsburgh-based Spanish charcuteria Morcilla, will lead the culinary team at 'Rojo by Razzle Dazzle.' The menu will feature signature dishes such as the Oxtail Montadito, which includes braised oxtail, caramelized onion, Mahón cheese, and crostini.
During daytime hours, the venue will offer a Spanish-American twist on Razzle Dazzle's signature brunch, featuring items like jamón croquettes alongside classics such as acaí bowls, pastries, and frittatas. In the evening, 'Rojo' will transition to an elevated dining experience, offering a menu inspired by Spain's culinary regions, including pintxos, tapas, and larger plates.
The beverage program has been developed in collaboration with Onada Consulting from Barcelona, drawing inspiration from notable bars in cities like Barcelona, Madrid, and San Sebastian. The selection includes artisanal vermouths, sangrias, sherries, and cava spritzes.
The restaurant's design features rich wooden accents, deep reddish-orange tones, and a combination of communal tables and intimate seating arrangements, reflecting Spain's communal dining traditions.
In addition to 'Rojo by Razzle Dazzle,' Virgin Voyages is introducing updates to other dining venues. 'Extra Virgin' will feature new Italian dishes such as pastas, arancini, seafood risotto, and roasted monkfish, while 'Gunbae,' the fleet's Korean BBQ venue, will add items like kimbap rolls, bulgogi fire meat, and bo ssam to its menu.
These culinary enhancements are part of Virgin Voyages' ongoing efforts to provide diverse and innovative dining experiences across its fleet.
